Leafy vegetables and root vegetables such as carrots are the biggest culprits for high nitrate levels. Nitrates naturally occur in water and soil. High levels of these can be dangerous, which is why some will warn against preparing foods such as carrots into baby food. You can still use them, but it's best to either grow your own and use them right away or buy fresh frozen.

Next, don't feed them these types of foods before 6 months of age. 3-6 months is the most susceptible as their stomachs are simply not ready for it.

Things to look out for are blueing of the mouth, hands and feet. In extreme cases there can be trouble breathing and loss of consciousness.
