Just steam the veggies long enough to make them as soft as needed. If you blend the veggies to make a puree use the water left over from steaming. The water will look dirty, but it is not, it is full of vitamins and minerals. Steaming veggies removes less vitamins and minerals then other cooking methods, this makes steaming the best way to cook veggies.
