Who knew

I made green beans with bacon for dinner last night figuring I would eat them and maybe the hubs would try them when he got home in the morning. Sami was in the living room watching a movie while I was cooking and as I was breaking up the bacon into the green beans she asked me what I was making and I told her it was just green beans with bacon. She got all excited and said "Yumm. I want some." I was all kinds of happy that she was excited about eating dinner because she had refused to even consider trying dinner the last three nights.

Who knew that something so simple that is decently nutritious would actually make her excited. It didn't even have cheese in it or on it. (Btw... when I get bacon I try to get boxes of back bacon because it is meatier. It is like cooking really thin ham steak.)

    It is so great when children surprise us...especially at meal time with eating the unexpected! ... I have never heard of back bacon (I know weird right) ... is it something that you get at the traditional grocer?

    Most of the time we only have like $50 a week for groceries so I get what I need at the grocery store down town in the small town I work in. Their meat department is tiny but they have a deep freeze next to the meat case that has different things in it every week or two. Sometimes they have the big 10lb pork loins and sometimes they have the 5lb boxes of bacon. Other times they have other stuff in that deep freeze.

    I am not really surprised that you haven't heard of back bacon because it isn't something you will find at walmart. I think the grocery store I get it at gets it from a meat locker. They get the uncured hickory smoked back bacon strips and they get boxes of the back bacon ends and pieces. I generally get the ends and pieces but this time I got the box of strips to see what it looked like because I wanted to try making bacon jerky. I got a bag of bacon jerky at the gas station and thought it was alright but way not worth $6 considering that I have a food dehydrator. Also it wasn't worth the $6 because it was made with the bacon strips like you would get at walmart. Thin strips that are almost more fat than meat. I liked the bacon jerky enough to be curious to see how it would turn out using a bacon that is more like a really thin ham steak using the marinade that we normally use for beef jerky. I have it in the food dehydrator now. It is starting to look good and smells good. Should be interesting.

      Its crazy how when you become a mom something as simple as your kid eating their veggis makes you so happy. :) It does me too lol
