Feeding your 9-12 month old solids

So I'm reading up on what to feed your 9-12 month old. Many believe you should start feeding them 3 meals a day and cut down on baby food and formula. Others believe to keep them on jarred baby food for as long as possible because they become picky eaters. I would think the more variety they have the better eaters they would be. What do you think?

I made the mistake with my first of staying on baby food too long...Table food is far better, in my opinion. Go for it!

So I went shopping today and decided to start cooking one meal a day for the beginning. I think it'll be an easier transition for me. So for breakfast she had oatmeal with fruit, lunch she didn't really want her jarred food but had half of it and a yogurt and a piece of a bagel as a snack. For dinner I figured I'd give it a go and cook her a meal. I made her Pastina steamed zucchini, yellow squash and carrots and pureed the veggies to make a sauce to put over the pastina. I also shredded some cheddar cheese on top. She liked the pasting and cheddar cheese but hated the vegetable puree. If it's not sweet potatoes she won't eat any other vegetable. How do you get kids to like their veggies. She doesn't like carrots, butternut squash, zucchini, peas, beans, spinach, yellow squash. Only sweet potatoes. I can't feed her sweet potatoes every day.
