My baked potato soup turned out amazing. I have never tried making potato soup before but I decided that I have a crock pot and I have a deep freeze so I can freeze what we don't eat right away that way we have some stuff in the freezer to use as quick meals during the week.

I know that there are a lot of different ways to make potato soup. Here is how I made it. I don't measure I just throw stuff together. Sorry.

I chunked up all but 5 potatoes of a 5 lb bag of redskin potatoes and put a couple of cups of water in the crock pot and cooked it on high for a couple of hours. I put it in the fridge over night. This morning the hubby pulled it out to warm up a bit before we continued cooking. I put it on high for an hour than drained off the water. I added a tub of sour cream, about a quarter brick of Velveta cheese. I let that cook for a couple of hours on high stirring frequently. I turned it down to low and added about half of a small spice thing of chives, one bag of real bacon bits, and about a quarter of a big brick of mild cheddar cheese. Got that stirred up and let it cook for a few hours on low.

The broth of the soup tastes amazing on a slice of bread. Baby even likes it.

    I wing it all the time. I don't use recipes much but I was one of those kids that was in the kitchen constantly. If i wasn't in the kitchen I was playing in the dirt or my mom's garden. I started helping cook when I was 3 yrs old. I am a bit of a foodie.

    I remember when I was in like first or second grade I wanted rice crispys treats one night and we didn't have them so I went through my mom's cupboard and seen that she had everything so I asked her if we could make them since she had everything. We ended up making a late night batch of crispy treats.
