Mmm, Latin food! What's your favorite?
Mmmm, Latin food! Huevos Rancheros are Delicious with a capital “D.” I'm totally with Lindaon putting Adobo seasoning on everything.
I'm not sure if it counts, but California burritos! If you haven't had one, you need to! I didn't know that burritos were different depending on where you go, silly me, but the “California”burrito is super yummy and bigger than a baby's arm... I'm so not kidding. I don't even know where to buy tortillas that big.
California burritos have carne asada, sometimes chicken too, guacamole, sour cream, cheese, and the kicker.. French fries! They are massive and not particularly healthy but filling and tasty.
Oh, and what are they called...Tortas? It's kind of like a taco salad with a crispy tortilla on the bottom then covered in lettuce, sour cream, guac, pico de gallo, meat, etc. I don't remember if that's the right name for them.
Enchiladas are yummy too. As much as I like ordering them out, they are also a quick, cheap, and easy meal to freezer cook.
When I make them, I cook a whole chicken in the crockpot and shred the meat (Save the bones for bone broth!) I saver the prettier looking bits for meals where you see the chicken, and take the less delicious looking but more flavorful parts to put in the enchiladas. I just buy a packet of enchilada sauce mix that you mix with water and tomato sauce. I line the pan with foil. Then, I put the chicken, some onions (save the peels for the bone broth!) black olives, cheese, and sometimes Sriracha in the tortillas and roll them small, enough of them to fill the pan so they are squishing against each other. Pour the enchilada sauce on top, cover with more cheese and foil and pop in the freezer. Once it's frozen, I take the foil wrapped meal out of the pan (if I can get it out) and wrap in plastic wrap. Then, when I take it back out, I just put the foil covered ice-slab in the same pan and place in a preheated oven. Take the foil off at the end to brown up the cheese. Makes for a nice, easy meal on a busy night and SO yummy the next morning with eggs if you like a hearty breakfast.
I like chicken quesadillas a lot too. My mom's husband always asks for me to make these and it's so simple! Just chicken (shredded, breast, whatever you have) with taco seasonings, onions with taco seasonings and caramelized, put on tortilla with cheese, fold, press in pan, flip, press, done. Christina, let me know what night we should have quesadilla night. Now I'm hungry!

I don't know if it's an authentic dish but we like taco salad. Tacos. Beans and rice with salsa and cheese. Those are the three we usually make and occasionally we'll make tortillas.
