Beta-Carotene

Beta-Carotene has some awesome health benefits. It's also a food you can eat to help you not burn from the sun in the summer. If eaten with pregnant it helps the baby produce the vitamins to keep jaundice away.

Eva is allergic to beta-carotene. You never realize how hard it is to avoid something until you have to. So here's a list of food that are high in beta-carotene.

I stopped here because the things farther down on the list haven't bothered her-such as ketchup and salsa. And yes, there are some things on this list that I've never heard of, but a lot of it we use consistently. She ate spinach the other night and poor little thing has boils again.. so i'm starting a food journal with reactions to get a handle on this. She also has a food dye sensitivity.

YEAH! And that was just 1/4 of the list. Once I got to the food that I knew hadn't bothered her, I stopped. Now..if she starts to get bothered by ketchup we'll have some problems lol.

I don't think they could tell me any more than avoid the foods. Different amounts of different foods bug her.. For instance, she can have five cherries every three days and be just fine. But she ate probably 4 tablespoons of spinach and she had a reaction.

I know. That's why I had to make a list lol. She will try just about everything luckily. Unfortunately, most of her favorite foods are on this list. Between this and the dairy allergy it keeps me on my toes. We are trying to figure out how much of her favorites she can have.
