Update on our new diet
A while ago a wrote a post about how we were switching to a more plant-based diet by following a korean meal plan. I just wanted to update you all on how it's going.
I originally switched for three reasons: to be healthier, to cut down our grocery bill, and to make cooking more manageable.
So far it's been great! We're on our third week of eating/shopping/cooking this way and I'm already meeting our goals. My husband feels a lot better then he did before the switch and we all have a lot more energy. Our grocery bill has shrunk some, though we're still stocking up on new ingredients. That means our bill will hopefully shrink more once I have a good pantry stock. Cooking has been waaaayyy better. New recipes make it exciting again! Plus, because we make a lot of things in bulk I'm only cooking every other day at the most. It's been really nice!
I think the hardest part is just switching over. It's not that bad, but it is a little inconvenient. I have to build a whole new set of recipes to pull from that are affordable and something we actually like. That means lots of time spent on the internet searching for things and converting measurements and finding substitutions for ingredients that we don't have (or are too expensive). Once I get a new solid recipe bank that will go away though...
Overall I'm really happy with our decision!
