Ok.. I HATE vegetables... HATE them... and so.. sadly, we don't eat many... I've tried broccoli.. fail... cauliflower.. super fail... we eat corn, but corn is a filler and why bother.. peas? YUCK... Carrots? Sure.. but with ranch.. wam? YUCKKKK!

So, I've failed my kids... granted we have fruit with every meal and they will eat salad...

SO.. I tried to mimic a root veggie dish I had at a restaurant the other day.. and it worked!! It was delicious.. and my kids ate it ALL and asked me for more! Whaaattt?

I am NOT a recipe share person.. But here you go...

Root vegetables... : Beets, parsnips, carrots, sweet potato, yam... I cubed them, tossed them in olive oil, garlic, salt and balsamic vinegar... I roasted them at 425 for about 30 minutes.. they got a little crispy and chewey on the edges.. the balsamic made it sweet with flavor and it was Awesome...
We all ate a bowl of it...

NOW.. warning... I don't know if it was the fresh garlic... or the garlic powder ( I love roasted garlic cloves, but the kids didn't eat those).. or maybe it's because we don't eat many veggies.. But.. we are all Gassy beyond anything Iv'e known... My kids are loving it and attacking with it and I've had to walk away from a crowd... but it was SO worth it...
