I'm always looking for simple vegetarian meals...

I am a vegetarian, but I'm often at a loss for vegetarian filling meals for my husband. As well as simple vegetarian meals for my kids. Any suggestions?

      lately we have been crumbling tofu (like ground beef) and mixing it in to meals. We made meatless meatballs the other day (they were awesome). We also do a lot of mexican rice bakes or risotto. The risotto is really filling. You could also do stuffed peppers but with crumbled tofu.

      Honestly we just wing most things. They tell you to use arborio rice but we couldn't find any so we just cooked brown rice and then added cream of mushroom with veggies and parm.

      Thank-you, I looked up a whole bunch of recipes and was wondering if I had to get a certain type of rice. I not that great on the wingin it. It never seems to leave the ground.

      lol... i think I just happen to get lucky. I smell the spices and think about what might taste good together.

      Today we took a scalloped potato, sausage, and veggies recipe and made it meatless. I crumbled up tofu mixed is with olive oil, onions, hamburger seasoning, ground beef pepper, liquid smoke, and worcestershire sauce (for a sausage type taste), then mixed in the scalloped potatoes as normal after the tofu and onions cooked for awhile. Added red pepper and let that sauteed for about 10 minutes then added mixed veggies and let it sauteed for another 10 minutes. To be honest it looked gross but tasted pretty awesome!

        We are doing mainly soy or almond milk but I still use eggs and butter occasionally.
        We aren't die-hard Vegans. :-)
